Tiberino Risotto "Milano" with Saffron (one-pot meal)

Preparation: bring 750 ml of water and 2 or more tbsp oil to a boil in large non-stick skillet or pan. Stir in the content of the package, cover and cook over medium-low heat for 16 minutes, adding more water if needed. Remove the lid and keep cooking for 2 minutes or more until the water is almost completely absorbed and the sauce is creamy. Add saffron, season to taste, drizzle with olive oil and add optional grated cheese before serving.

Useful tips: add ¼ glass of white wine during cooking. Add ¾  of tsp of dark cocoa and 2 tbsp of heavy cream before removing from flame.

Wine-pairing: Pinot or white, light body wines.
