Fresh, brilliant crimson peppers are mashed to a coarse paste, mixed with olive oil and left to macerate for few months to develop the many layers of complex flavors. This peperoncino is the perfect ingredient and complement to many traditional dishes of Campania and Calabria, in the south of Italy.
IASA is originally a salted anchovy producer tucked away near the Amalfi Coast in Italy, but they branched out to chilies in oil (peperoncino) to spice up their anchovy dishes. These chilies are mashed and left to macerate in the olive oil to develop their flavour. Great is pasta with olives, lemon, and of course, anchovies.
